the only one i ever caught got filleted and then skinned. i usually do this with anything i keep just to keep the mess of the scales down to the minimum,but the fillets with the skin on do tend to hold together better when fried.
making me hungry just thinking about it.

I had a lady next door to me ask if I did any good fishing last weekend. She said she saw me leave with poles in hand. I told her I did fairly well and that afternoon I went to Martin Creek Lake and saw tons of Tilapia beds. She said that she loves to eat those and that her brother scaled them and then filleted them so the meat would stay together.
She pretty much said what you did Rich. Thanks for the reply.
